Lactation Bites

As a busy mom (to a very mobile 8 month old!), making time to meal prep has been low on the priority list. I am very thankful that my husband has taken over cooking our meals (breakfast/lunch/dinner) because I exclusively pump and that takes up a lot of my time!
But since I am still breastfeeding, I need snacks!! I tend to go for the easy, grab-and-go snacks, but the ones we buy from the store tend to be overly processed and full of empty calories. This just leaves me unsatisfied and looking for more things to eat!
This week I decided to make some energy bites. These are great because they are filled with fiber, healthy fats, and protein to keep me full. They also contain oats, seeds and nuts (galactogogues) which are all great for milk supply (if you are breastfeeding!)
These are quick and easy to prepare! Just roll them into balls and pop in the fridge to cool and harden!
Ingredients:
1c rolled oats
½ c ground flaxseed
1c peanut butter (or other nut butter of choice)
¼ c maple syrup or agave
1tsp vanilla extract
½ c chocolate chips
