My go-to Plant Based Recipes

Happy Monday friends! Over on my Instagram, I have been sharing some plant-based recipes that I make for lunch and dinner. Since so many of my followers have been asking for recipes, I thought I would put them all in one place! Ethan and I started transitioning to a plant-based diet about a year ago and we absolutely love it. We like the term “plant-based” because it is not restrictive, but really all encompassing to the way we strive to eat!


Below are our 4 GO-TO recipes that are easy, incredibly tasty, and if you make them for family or friends I guarantee you they won’t even notice that they’re vegan ;)



Vegan Enchiladas (from Cookie and Kate)


We LOVE Mexican food and luckily, it’s super easy to make yummy Mexican dishes without meat! The hard part seems to be the cheese, but substituting with vegan mozzarella worked really well! These enchiladas have so much flavor and are very filling! Get the recipe HERE!







Vegan Pad-Thai (from Healthy Girl Kitchen)


If there is one recipe my husband is OBSESSED with lately - it’s this one. I stumbled across this recipe on Pinterest and it is literally a gold mine. We make it pretty much every other week and it tastes like it came from a Chinese restaurant. We can’t get over how amazing it is!! If you’re looking to add some protein, I recommend using a protein pasta (made from chickpeas or lentils) or you can add tofu in! Get the recipe HERE!






Buffalo Cauliflower Wraps (from Running on Real Food)


We LOVE making these wraps for lunch. To really crunch up the cauliflower, I recommend putting the oven on broil for a few minutes once you’re done baking. These wraps are just so tasty and we don’t feel like we’re missing out on buffalo chicken. Plus cauliflower is packed with antioxidants, B vitamins, and is known to reduce inflammation. SO cool! My favorite lunch salad (from yours truly!!)



This salad I make ON REPEAT. There is no “recipe” because I made it up myself but it’s seriously amazing. It keeps me full forever, if packed with protein, and it does not disappoint your taste buds.


Base: Kale (can also use mixed greens). I like to marinate my kale in Extra Virgin Olive Oil (EVOO) and Apple Cider Vinegar (ACV) -or- balsamic vinegar


Toppings:

  • Couscous (we go for the plain kind, but there are also tons of flavored couscous you can get!)

  • Cucumbers

  • Strawberries

  • Apples (honeycrisp is my fav!)

  • Shelled edamame

  • Chopped walnuts

  • Dried cranberries
